I am so excited that I will be teaching a 6pm spin class at the Paradise Gym in Swampscott Monday evenings at 6pm.
I know Mondays are tough...but I am hoping a big cardio blast will help get rid of all of those weekend toxins...just think what burning an extra 500 calories a week could do for you mind and body!!!
So please join me beginning this Monday, April 5th at 6pm.
You do not have to be a member to take the class...classes are $7 and a bike can be booked up to three days in advance by calling 781-586-9666.

Blueberry Pumpkin Pancakes
These are quick and easy....my new favorite ingredient..Truvia, made form the stevia plant, sold at whole foods & Market Basket (or as I refer to it the "Big B")
1/3 cup of egg beaters
2 Tablespoons of ground Flax meal
1 Tablespoons of canned pumpkin
1 truvia packet
a dash of cinnamon
1/4 cup of frozen blueberries
Canola Oil Spray
Best Life Butter Spray
Mix all ingredients together....heat a skillet greased with canola oil spray. The pan must be heated before pouring the mixture in!Cook over medium heat.
Pour very small sand dollar pancakes...mixture should make about 5-6 small pancakes.
Spray with "Best Life" butter spray, sprinkle with a little truvia and cinnamon and ENJOY!!!

I know, I know...I haven't been updating my blog and I am sorry! I am back to it now and will be adding new recipes, updated class/training schedules on a regular basis!
This has been a very exciting 6 months. Not only has MSTC become the official "Home of Rockstar Fitness" but I have also had the pleasure of increasing my class and one on one training clientele. I feel so blessed to be associated with such great people on a daily basis and I look forward to even more good things to come.
Please continue to follow my blog over the next few months...I am bringing some really cool things to the North Shore in conjunction with MSTC.

Heathly Apple Crisp for One
I love this because it helps with portion control. I don't know about you but I love apple crisp and could take down an entire pyrex of it!! With this recipe I know I am only consuming one apple not four!
One apple sliced and cored. (peeling is optional, I like the skin on)
sprinkle apple with 1 packet of truvia (stevia but this is my favorite version)
& cinnamon
Microwave apple for 3 to 4 minutes
sprinkle with chopped walnuts and add a touch of light whipped cream....delicious!!

Easy Rock'in Apple Sauce
This is so easy to make and really good! I still can't believe I own a crock pot!!!
12 apples cored and sliced (any kind, can mix varieties)
4 cinnamon sticks
cinnamon, all spice, ginger and a dash of cloves
2 Tablespoons of sugar free maple syrup ( or you can use real if you don't want the splenda)
1/4 cup of water
Combine all ingredients in a slow cooker and set for 4-6 hours. You won't believe how good it is and how great you house will smell!!
Enjoy!
